SOUR KEUENG ACEH

Main Materials :

-    4 pieces of Tuna Fish (can be replaced with milkfish, snapper and anchovies)
-    8 - 10 pieces of Cucumber Tree / Bilimbi / Dried Bilimbi / 2 pieces of Green Tomatoes
-    2 pieces of Lime
-    2 pieces of Lime Leaf
 
Stir-frying Materials :

-    Red Onion (to taste)
-    Garlic (to taste)

Ground Spice Materials :

-    7 pieces of Cayenne Pepper (can be added if like spicy)
-    ½ piece of Spanish Onion
-    2 cloves of Garlic
-    1 segment of Ginger
-    2 pieces of Lime Leaf
-    ½ teaspoon of Pepper Powder
-    ¼ teaspoon of White Pepper
-    ½ teaspoon of Turmeric Powder
-    Salt (to taste)
-    3 tablespoons of Vegetable Oil

How to make :

-    Cut and sprinkle salt on the fish, plus lime water, then fried ½ cooked.
-    Saute garlic and spanish onions. Saute until slightly browned.
-    Put the water 5 cups and put all the spices fine. Let stand for 10 minutes.
-    Put the fish and bilimbi. Let stand for 10 minutes.
-    Sour Keueng Aceh ready to serve.

SPECIAL ACEH NOODLES

Materials :

-    300 gr of Large Wet Noodles (boiled in hot water).
-    3 cloves of Red Onion (thinly sliced).
-    750 ml of Water.
-    50 gr of Bean Sprout.
-    1 ½ tablespoons of Sweet Soy Sauce.
-    1 teaspoon of Sugar.
-    200 gr of Lamb or Beef Meat (to taste).
-    4 cloves of Garlic (thinly sliced).
-    1 piece of Fresh Tomatoes (in pieces).
-    300 ml of Beef Broth.
-    50 gr of Cabbage (thinly sliced).
-    ½ tablespoon of Salt.
-    ½ teaspoon of Vinegar.
-    1 piece of Bay Leaf.
-    3 tablespoons of Vegetable Oil.
-    1 stalk of Spring Onion (cut).

Ground Spices Materials :

-    4 cloves of Garlic.
-    4 pieces of Red Chilli (seeded).
-    ¼ teaspoon of Cumin Powder.
-    6 cloves of Red Onion.
-    1 grain of Cardamom.
-    2 cm of Turmeric (on burn).
-    ½ teaspoon of Pepper White Powder.

Pickles :

-    1 teaspoon of Sugar.
-    ½ teaspoon of Salt.
-    3 pieces of Cucumber Fresh (remove the seeds and cut the box).
-    1 teaspoon of Vinegar.

Complement Materials :

-    Fried Onion (to taste).
-    Red Onion (raw).
-    100 gr of Crackers Bearing Edible Seeds.
-    Cayenne Pepper.
-    Lime Slice.

How to make :

-    Boil the meat and bay leaf on water, after ripe watering throw away it and cut to taste, set aside.
-    Saute red onion, garlic and ground spices until smell nice, add the meat, stir until evenly distributed.
-    Add bean sprouts, tomatoes and cabbage, stir until cooked.
-    Put the salt, sweet soy sauce, beef broth, sugar and vinegar. Cook until soaked.
-    Put the noodles and sprinkle spring onions, mix well and cook until done.
-    Serve Aceh Noodle Special with pickles, complement and enjoy instantly.

SIE KAMENG ( CURRY LAMB ACEH )

Main Materials :

Wowww Food (Sie Kameng / Curry Lamb Aceh)-    1 kg of Lamb Meat (cuts)
-    5 tablespoons of Vegetable Oil (for sauteing)
-    4 cloves of Red Onion (thinly sliced)
-    2 cloves of Garlic (thinly sliced)
-    500 gr of Innards Lamb (clean and cuts)
-    2 stalks of Lemongrass (tossed)
-    15 strands of Curry Leaf
-    1 ½ lt of Coconut Milk (from 1 ½ coconut)

Ground spice materials :

-    15 pieces / 200 gr of Red Chilli Dry or 20 pieces of Fresh Red Chili
-    1 teaspoon of Salt
-    7 cloves of Red Onion
-    3 cloves of Garlic
-    ½ tablespoon of Turmeric (chopped)
-    ½ tablespoon of Ginger (chopped)
-    2 tablespoons of Coriander (roasted)
-    5 grains of Candlenut (roasted)
-    1 teaspoon of Cumin Seeds (roasted)
-    1 pieces of Star Anise (roasted)
-    ½ teaspoon of Fennel (roasted)
-    2 cm of Cinnamon
-    ½ tablespoon of Pepper Seeds
-    2 grains of Cardamom (roasted)
-    3 grains of Cloves (roasted)
-    1 tablespoon of White Poppy Seeds (roasted)

How to make :

-    Stir-fry and stir the lamb and ground spice. Let stand for 10 minutes, set aside.
-    Saute the red onion and garlic until fragrant.
-    Put the spiced lamb meat, lamb innards, lemongrass and curry leaf, stir until the seasoning and whitish-colored meat.
-    Pour coconut milk, cook until tender meat and greasy thick sauce. Lift and serve.
