tablespoons of Sweet Soy Sauce

pieces of Hot Chilli (leave intact, not cut)

pieces of Red Chilli (leave intact, not cut)
- 5
cloves of Red Onion (without peeled)
- 2 fingers
of Ginger (without peel)
- 3
fingers of Turmeric (without peel)
- ½
teaspoon of Salt
- 3
tablespoons of Tamarind Water (from 50 ml hot water and a small piece of tamarind
balls)
- 1 ½
tablespoons of Brown Sugar
How to make :
- Spread the milkfish with lime water with salt
and squeeze. Let stand for 15-20 minutes then wash. Put into the pan and coat
the cavity of the fish and the outside with sweet soy sauce and a half of lime
water. Make sure it's flat. Set aside.
- Grilled / baked spices : hot chilli, red chilli,
red onion, ginger and turmeric on the stove. Grilled / baked until the outside
is slightly burned. Peeled turmeric, red onion, ginger and crushed.
- Take another pan and fill with water and
spices that are roasted / burned and then cook until boiling. Add salt, sugar
and tamarind water then cook until the sauce shrinks and the fish matures. Add
the previous boil water and cook it back to boiling.
- Customize the taste with your taste. Serve.
