THE BALINESE BRENGKES FISH

Materials :

-    500 gr of Meat Fish (fish mackerel or marlin, to taste)
-    Banana Leaf (to taste)

Spices Materials of Genep Small (Balinese Spices) :

-    20 cloves of Red Onion
-    10 cloves of Garlic
-    10 pieces of Cayenne Pepper (to taste)
-    3 pieces of Big Chilli
-    10 cm of Galangal
-    6 cm of Turmeric
-    4 cm of Ginger
-    4 cm of Kaempferia Galanga
-    1 teaspoon of Coriander
-    6 stalks of Lemongrass (take white and finely sliced)
-    2 sheets of Bay Leaf
-    ½ teaspoon of White Pepper
-    ½ teaspoon of Black Pepper
-    5 pieces of Candlenut
-    1/8 piece of Nut Seed (grated)
-    2 pieces of Dried Cloves
-    2 pieces of Shrimp Paste (burn)
-    1 piece of Tomato (sliced)
-    Salt (to taste)
-    Sugar (to taste)
-    Cooking Oil / Coconut Oil
-    Flavoring (to taste)

Additional Seasoning Materials :

-    200 gr of Genep Small Spices
-    Lime Leaf (to taste)
-    Bay Leaf (to taste)
-    20 ml of Coconut Milk
-    Salt (to taste)
-    Sugar (to taste)

How to make :

How to Make The Genep Small Spices :
-    Cuts all spices materials for easy grind (except tomatoes and lemongrass) and stir-fry all the spices.
How to Make Brengkes Fish :
-    Wash fish meat, discard bone and chop or grind until smooth.
-    Mix even the genep small spices with coconut milk, sugar and salt.
-    Mix fish meat that has been in the puree with a mixture of genep small spices and coconut milk.
-    Pour the fish dough to taste in banana leaf, give 1 sheet of lime leaf and 1 bay leaf, wrap and stitch with wood stick.
-    Steamed until cooked.
-    The Balinese Brengkes Fish ready to serve.

THE BALINESE BLAYAG RAJA

Materials :

-   Blayag (rice cake wrapped in coconut leaf in roll)
-   The Savory Salad Vegetable
-   Shredded Chicken
-   Sauce Chilli
-   Fried Soy Beans
-   Chicken Leather Chips

Sauce Seasonings Materials :

-   Rough Rice Flour
-   Tumeric
-   Garlic
-   Kaempferia Galanga
-   Salt
-   Pepper
-   Bay leaf
-   Fried Onions

How to make :

-   Blayag is a rice cakes which is wrapped with coconut leaf. Weared the coconut leaf as a wrapper so as not too soft.
-   Blayag Sauce is a mixture of all these ingredients.
-   Blayag King served with eggs, shredded chicken, bean sprout, sauce chilli, then in flush with broth sauce like kare sauce and sprinkled with fried soybeans. The taste ranges from savory, slightly sweet and spicy.
