RICA OF SKIPJACK TUNA FISH



Material :
  •  400 gr of Skipjack Tuna Fish, (at cut into 4 parts)
  • 1 tablespoon of Sugar
  • 1 teaspoon of Salt
  • 1 teaspoon of Water Lime
  • 3 pieces of Lime Leaf (cut into slices)
  • 1 piece of Tomato (small pieces)
  • 5 shoots of Basil
  • Cooking Oil (sufficiently) 
Seasoning Blend Crude Materials :
  • 4 cloves of Red Onions
  • 5 pieces of Red Chilli
  • 3 cloves of Garlic
  • 3 cm of Ginger
  • 2 stalks of Lemongrass (cut into slices)
  • ½ teaspoon of Salt

How to make :
  1. Marinate the skipjack tuna with lime water and salt, let stand for 10 minutes.
  2. Fried that fish until done.
  3. Stir-fry seasoning blend crude materials until nice smell, then enter the lime leaf, tomatoes, sugar and salt, mix well.
  4. Enter the fried fish and basil and stir.
  5. Remove and serve.

DABU – DABU OF CONDIMENT

Material :
  • 10 pieces of Curly Red Chilli
  • 10 pieces of Red Hot Chilli
  • 2 pieces of Tomatoes
  • 5 pieces of Red Onion (in small slices)
  • 1 tablespoon of Shrimp Paste
  • ½ teaspoon of Salt
  • 1 tablespoon Water Lime
  • 3 tablespoons Hot Cooking Oil

How to make :
  1. Cut small slices of red hot chilli, curly red chilli and red onion and set aside.
  2. Cut the tomatoes like a small box, and set aside.
  3. Mix the pieces of red hot chilli, curly red chilli and red onion earlier with tomatoes, salt and shrimp paste.
  4. Add the hot cooking oil and stir well.
  5. Insert the lime water and stir until blended.
  6. Completed and serve.

 Material :
  • 2 pieces of Sweet Corn (peeled seeds)
  • 2 liters of Water
  • 1 piece of Red Chilli (sliced round)
  • 4 pieces of Red Hot Chili (sliced round)
  • 6 cloves of Red Onion (thinly sliced)
  • 200 gr of Shrimp (peeled)
  • 2 ½ teaspoons of Salt
  • 2 ½ teaspoons of Sugar
  • 75 gr of Grated Coconut (rough)
  • 1 tablespoon of Water Lime
  • 5 rod of Basil (leaves only)
  • 2 pieces of Tomatoes (cut) 
How to make :
  1. Boil water and fill of sweet corn, red chilli, red hot chili and red onions to a boil.
  2. Add the shrimp, salt and sugar, then cook until done.
  3. Put the grated coconut, water lime and basil and cook again until cooked.
  4. Before the lift add the tomatoes before hand.
  5. Remove and serve.

  • 150 gr of Beef Liver
  • 150 gr of Beef Intestine
  • 150 gr of Beef Heart
  • 3 cm of Galangal (crushed)
  • 1 stalk of Lemongrass (crushed)
  • 7 pieces of Cloves
  • 3 cm of Cinnamon
  • 800 ml of Water Broth (from boiled beef)
  • 1 teaspoon of Brown Sugar
  • 50 gr of Grated Coconut (roaster and blender until smooth)
  • 50 ml of Tamarind Water
  • 1 piece of Yellow Egg

Ground Spices :

  •  7 cloves of Garlic
  • 10 cloves of Red Onion
  • 8 pieces of Chilli Red Curly
  • ½ teaspoon of Cumin Seeds
  • 1 tablespoon of Coriander
  • 3 cm of Ginger
  • ½ piece of Nutmeg Seed
  • Salt to taste

How to make :

  1.  Boiled beef and variety meats separately until completely cooked and tender, then set aside.
  2. Stir-fry all the ground spices and added with some other ingredients such as ginger, clove, lemongrass and cinnamon until cooked and cause a nice smell.
  3. Put the beef and variety meats  that has been boiled earlier, mix and then enter the broth and cook until boiling.
  4. Add grated coconut previously roasted and puree in a blender and add the tamarind and boiled water back to the boil and the sauce slightly thickens.
  5. Enter a yellow egg on the top and serve.

  •  250 gr of Beef Shank Meat (cut into 2 cm size)
  • 750 ml of Water
  • 1 cm of Ginger (crushed)
  • 1 cm of Galangal (crushed)
  • 3 pieces of Lime Leaf (in tatters)
  • 2 stalks of Lemongrass (crushed)
  • 1 teaspoon of Salt
  • ¼ teaspoon of Nutmeg Powder
  • 1 cm of Cinnamon
  • Cooking Oil
Ground Spices :
  •  7 cloves of Red Onion
  • 3 cloves of Garlic
  • 2 pieces of Candlenut (roasted)
  • ½ tablespoon of Coriander (roasted)
  • 2 cm of Turmeric
  • ¼ teaspoon of Cumin Seeds
Supplementary Material :
  •  50 gr of Noodle Soun (brewed with hot water)
  • 1 stick of Green Onion (sliced)
  • Fried Onions
  • Rice Cake / Ketupat (in pieces according to taste)
  • Lung Chips
  • Potato Patties
How to make :
  •  Boil the beef shank meat along with water until soft.
  • Then heat the oil and stir-fry all the ground spices and add some ingredients are ginger, galangal, lime leaves and lemongrass until smell goods.
  • Then pour the all seasoning stir earlier into the stew, add salt, nutmeg and cinnamon. Cook again until the marinade is absorbed.
  • Once cooked, put into a bowl and add the supplementary materials such as rice cake / ketupat, noodles soun, green onion, fried onions, lung chips and potato patties. Flush with sauce and meat.
  • Serve immediately.
