Material :
- 250 gr of Beef Shank Meat (cut into 2 cm size)
- 750 ml of Water
- 1 cm of Ginger (crushed)
- 1 cm of Galangal (crushed)
- 3 pieces of Lime Leaf (in tatters)
- 2 stalks of Lemongrass (crushed)
- 1 teaspoon of Salt
- ¼ teaspoon of Nutmeg Powder
- 1 cm of Cinnamon
- Cooking Oil
Ground Spices :
- 7 cloves of Red Onion
- 3 cloves of Garlic
- 2 pieces of Candlenut (roasted)
- ½ tablespoon of Coriander (roasted)
- 2 cm of Turmeric
- ¼ teaspoon of Cumin Seeds
Supplementary Material :
- 50 gr of Noodle Soun (brewed with hot water)
- 1 stick of Green Onion (sliced)
- Fried Onions
- Rice Cake / Ketupat (in pieces according to taste)
- Lung Chips
- Potato Patties
How to make :
- Boil the beef shank meat along with water until soft.
- Then heat the oil and stir-fry all the ground spices and add some ingredients are ginger, galangal, lime leaves and lemongrass until smell goods.
- Then pour the all seasoning stir earlier into the stew, add salt, nutmeg and cinnamon. Cook again until the marinade is absorbed.
- Once cooked, put into a bowl and add the supplementary materials such as rice cake / ketupat, noodles soun, green onion, fried onions, lung chips and potato patties. Flush with sauce and meat.
- Serve immediately.
